Kashmiri always love to have Kahwa in the morning as breakfast tea, particularly when it is winter and outside is heavy snowfall. As a condiment we serve it during big functions especially in marriage ceremonies. Our History reveal that Kashmiri Saffron has been cultivated and consumed for more than 3,000 years and the product Kahwa is always associated to our cultural history. we use it to add favour and colour to food but can also be consumed as a tea called in Kashmiri Kahwa, which is what, we will share our experiences here with, as being Kashmiri. Between 150,000 and 200,000 flowers are needed to produce one kilo of the spice, with each flower being harvested and stripped by hand and then carefully dehydrated, contributing to the costly price. Also known as Red Gold, Saffron, spice is derived from crocus sativus, or the purple saffron flower. The saffron strands that we all are familiar with are basically the stigma of the flower which are collected and dried to be sold at prices of gold. Kashmiri saffron is the rarest and the most expensive form of saffron available in the world. The reason for this is its limited production of just over 2,000 kgs, which is very less as compared to other producers of saffron. Also, what distinguishes Pure Kashmiri saffron from Italian, Spanish or Afghani Saffron is its highest levels of safranal, crocin and picrocrocin, but this vivid red spice may be more beneficial than you thought.
